Wild Purple Muffins

  • 1 ¾ c. flour
  • 1/3 c. sugar
  • 2 ½ tsp. baking powder
  • ¾ tsp. salt
  • 2 T. honey
  • 1 beaten egg
  • ½ c. yogurt
  • ½ c. milk
  • 3 T. cooking oil
  • ¾ c. raspberries

Preheat oven to 400F.

Stir together flour, sugar, baking powder and salt.

Make a well in the center.

Mix egg, milk, honey, yogurt and oil. Add all at once to flour. Stir until moist. Mix in crushed raspberries. Pour into lined muffin tins to 2/3 full.

Bake 20 to 25 minutes. Remove from pan. Makes 12 muffins.
